Re-Engineering the Cone: How a Simple Question Led Us to Build the Future of Net-Zero Ice Cream

It all started with a simple question: Why does buying an ice cream on a sunny day have to cost the earth?

For decades, the British festival field and event space has been monopolised by the traditional diesel ice cream van. To keep their freezers cold and their machines churning, those vans have to leave their diesel engines idling for six, seven, or eight hours straight. That means clouds of toxic exhaust fumes, relentless engine noise, and a massive carbon footprint—all just to serve a single flavour of aerated, mass-produced "whippy."

At Udderly Lush (part of the Tastes Good Does Good group), we looked at that outdated model and decided to tear up the rulebook. We didn't just want to make better ice cream; we wanted to re-engineer the entire soft-serve experience from the ground up—generating sustainable commercial revenue that directly fuels our environmental and social purpose.

Upgrading the Experience: Zero Overrun, 25 Flavours & Doggie Soft-Serve!

When you step up to a traditional ice cream van, you get one choice: standard vanilla pumped full of air (known in the industry as "overrun").

We believe customers deserve an unforgettable moment, not just a quick sugar fix. Here is how we completely transformed the menu:

  • Zero-Overrun Indulgence: Our soft-serve is dense, rich, and velvety, made without pumping cheap air into the mix.

  • 25 Bespoke Flavours (4 Rotating Daily): Because we use a modular bank of compact machines rather than one giant diesel-powered tank, we serve four distinct gourmet flavours every single day, rotating through our library of 25 original recipes.

  • No Pup Left Behind: We even created our own signature Doggie Soft-Serve, creating a joyful moment for four-legged festival-goers and pet owners that no traditional ice cream van can touch.

  • Interactive Theming: From festival fields to indoor corporate takeovers—like transforming our setups into Grease’s iconic "The Frosty Palace" complete with rapid-serve interactive topping stations—we go where exhaust-belching vans are legally banned from treading.

Winning on the Environment: Nothing to Landfill (You Can Even Eat the Spoon!)

Being a purpose-driven brand means looking at the full lifecycle of every serve. Operating a Net-Zero pitch means nothing if you leave behind a mountain of single-use plastic.

We designed our service model around Zero Food Waste and Zero to Landfill:

  • Notpla Seaweed Packaging: Our tubs are coated with innovative, home-compostable seaweed extracts rather than hidden plastics.

  • 100% Edible Spoons: Why throw away a wooden or plastic spoon when you can eat a crunchy biscuit spoon instead? When our customers finish their dessert, there is literally zero waste left behind.

The Engineering Breakthrough: Meet the Aero-Pod MK-III

When we took our Net-Zero gazebo to a major 4-day summer festival, we went head-to-head with three traditional diesel ice cream vans. Trading for just 6 hours a day, the public voted with their feet—helping us generate £12,000 in sales and allowing us to reinvest every penny of profit into scaling our fleet to 10 soft-serve machines.

Festival directors loved what they saw and gave us a clear challenge: "If you can put 3 or 4 mobile Net-Zero carts across our site, we will ditch the diesel ice cream vans for good."

Our first two generation-one carts proved the concept, but dragging heavy catering gear across muddy festival fields requires extreme durability. Then, we had a lightbulb moment: commercial aviation carts. Engineered to survive extreme turbulence and decades of heavy airline use, decommissioned aircraft carts offered the ultimate lightweight, indestructible chassis.

How the Aero-Pod Works Off-Grid:

Our Aero-Pod MK-III is smaller than an ice cream van, agile enough to wheel through standard double doors, and 100% self-contained:

  1. 350W Flush-Fit Solar Canopy: Integrated directly into the 1400mm x 510mm roof frame, rigid monocrystalline solar panels harvest daylight energy continuously while we trade.

  2. Smart Lithium Power & Staggered Load Rotation: Powered by an onboard EcoFlow lithium battery station, we bypass the 1,500W peak startup surge of running three machines at once by igniting our soft-serve units in a smart sequential rotation.

  3. The 1°C Thermal Pre-Chill Hack: Rather than forcing our soft-serve machines to burn heavy battery power chilling room-temperature liquid, we hold our reserve mix in ultra-efficient 15W portable compressor fridges at precisely 1°C. When the mix hits the hopper, the machine's sensors register 1°C, skip the heavy chilling cycle entirely, and jump straight into freeze-and-churn—slashing our energy consumption by over 50%.

  4. Autonomous Hygiene: Built right into the stainless-steel counter is a self-contained EHO water module (20L fresh and 20L wastewater) with a hot-water sensor sink.

The Future of Event Catering is Silent, Clean, and Delicious

By combining upcycled aviation engineering, smart thermodynamics, and solar power, our Aero-Pod carts prove that sustainability doesn't require compromise. We can out-serve, out-flavour, and out-manoeuvre fossil-fuel vans—all while protecting the planet and funding our mission.

Whether you are a festival director looking to decarbonise your site, or an event planner looking for a show-stopping indoor dessert experience, the future of soft-serve has officially landed.
